It certainly feels like spring already! We picked up our flats of strawberries @crescentcityfarmersmkt several weeks ago and we kegged Petite Fraise, our lovely French cider coferment last week.

It’ll be ready late summer as we naturally carbonate (keg condition) all of our ciders & meads - patience is a virtue.

La Framboise, 6.3%. French cider w/ raspberry cordial.

A fun variant of our coferment styles, this is roughly four parts French bittersweet apple juice and one part Italian raspberry cordial fermented together from day one. Like all of our ciders and meads, this is naturally carbonated (or keg conditioned - somewhere between pet nat and method traditional, technically speaking) and aged for at least six months before it got tapped.

On draft now and it will be a part of our February Shipping Club (Golden Jubilee - the Quarterly Club). Link in bio to join up.

Introducing @pietydesirechoc chocolate plates.

We’ve learned that akin to our @stjamescheese cheese & charcuterie boards, a lot of our crisp and effervescent ciders (and meads) pair with a lot of Piety’s offerings. Plus a lot of our club members enjoy an extra treat when they visit.

Markets speak, businesses hear!

On offer most days. $10 ($8 club) for a rotating selection of two bonbons and two lines of dealer’s choice chocolate. For Mardi Gras season we will offer their King Cake - still #glutenfree but contains almond - and Sazerac bonbons. As always with our boards and flights you can mix and match if there are any allergy issues.

We hope everyone had a Merry Christmas and is still enjoying their decorated tree! We will be open today, Boxing Day, with bonus hours of 3-6pm. Our regular hours start back up tomorrow and cheese & meat plates will back on offer tomorrow as well. We are back from our travels and look forward to chatting with y’all!

A pair of circa 2017 ciders on tap right now. Viscount is now “export strength,” meaning we brought it to 6.9% so that we can ship it. Cavendish is like if Runts banana was also an acid bomb. Enjoy!

There are also two options of Hot Spiced Cider jars right now. Washington cider based is light in color and acidic, whereas the French is darker and tannic. Get one of each and do a taste test at home.

Our jars (750 ml) of Hot Spiced Cider go fast this time of year. A case and a half just walked out the door our first hour open. This is your friendly reminder to pre-order jars by December 7th. We try to keep stock available in the taproom but there are no guarantees. We will have it warmed up in the taproom for you by the glass. Happy December!

Yes, Viscount is back! We used to describe this cider as boozy, caramel apple on our menu and that still applies. Caramel is not added to this cider but it describes the silky, rich deliciousness that is Viscount. Cheers!

*we only ship 6.9% and below, so we dialed up a Viscount recipe that perfectly fits the requirement.
